I don’t have a vast collection of dip recipes to share. Since I rarely host gatherings outside of big holidays, my focus is usually on crafting dinners.

You’ve all been asking for more appetizers, and I have to admit, every time I explore new appetizer recipes, I have a blast. There are so many I’ve yet to try!

Garlic bread is one appetizer I frequently prepare. My brothers are obsessed, and I serve a fresh loaf with most family meals. I always use roasted garlic and plenty of fresh basil. Inspired by our family favorite, I’ve transformed this classic into a delicious dip perfect for late spring and summer!

Details

Begin with the garlic. I prefer to roast one or two heads along with a few shallots, olive oil, fresh thyme, and black pepper. Roast the garlic until it turns very soft and mashable, which typically takes around 30 minutes in the oven.

Once the garlic is roasted, take out the garlic and shallots from the baking dish. Add a handful of cherry tomatoes and place them in the oven to roast.

As the tomatoes roast, I mash and chop the garlic and shallots. Then, I combine them in a bowl with cream cheese, mayo, freshly chopped basil, plenty of black pepper, and chili flakes.

Add the cheese dip to the tomatoes, sprinkle generously with shredded mozzarella, and complete the baking process!

Once the cheese has melted, remove the pan. If excess oil has pooled on top, drain it off and save it for dipping bread (delicious).

Garnish generously with fresh basil and sliced cherry tomatoes. It’s incredibly simple and absolutely delicious. The minimal prep and few extra dishes make it even more appealing.

Ingredients

  • 1 -2 heads garlic
  • 1-2 shallots
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh thyme leaves
  • kosher salt and black pepper
  • 2 cups cherry tomatoes
  • 8 ounces cream cheese, softened
  • 1/4 cup mayo
  • 1/2 cup fresh basil, chopped
  • 1/4 cup grated parmesan cheese
  • 2 cups shredded low moisture mozzarella cheese

Instructions

1. Preheat the oven to 400° F.

2. Place the garlic and shallots in a small (8×8 inch or smaller) baking dish. Drizzle with olive oil. Add the thyme. Bake for 40 minutes, until deeply golden and very soft. Remove the garlic and shallots, let cool.

3. Add 1 1/2 cups tomatoes to the baking dish. Toss with olive oil, salt, pepper, and chili flakes. Bake for 10 minutes.

4. Squeeze the garlic cloves and shallots onto a cutting board. Mash/chop into a paste. In a bowl, combine the cream cheese, mayo, garlic, shallots, and basil. Season with pepper. Mix in the parmesan and 1 cup mozzarella.

5. Pull the tomatoes out. Add the cheese dip, and gently mix the dip into the tomatoes. Top with mozzarella. Bake 15 minutes, until the cheese has melted and the sauce is bubbling.

6. Slice the remaining tomatoes. Serve topped with fresh basil, thyme, and sliced tomatoes. Add chili flakes too!! Dig in with bread and/or crackers.
