🛒 Ingredients
For the Pancakes
- 2 cups (250g) all-purpose flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 ripe bananas, mashed
- 2 large eggs
- 1½ cups (360ml) milk
- 2 tbsp melted unsalted butter
- 1 tsp vanilla extract
For the Topping
- 2 bananas, sliced
- Maple syrup or honey
- Powdered sugar
- Whipped cream (optional)
- Butter (optional)
👩🍳 Instructions
1. Prepare the Batter
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, mash the bananas until smooth. Add the eggs, milk, melted butter, and vanilla extract. Whisk until well combined.
Pour the wet ingredients into the dry ingredients and gently fold together until just combined. A few small lumps are perfectly fine—overmixing can make the pancakes dense.
Let the batter rest for 5–10 minutes. This helps create extra fluffy pancakes.
2. Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter.
Pour about ¼ cup of batter onto the hot skillet for each pancake.
Cook for 2–3 minutes, or until bubbles appear on the surface and the edges begin to set.
Flip carefully and cook for another 1–2 minutes, until golden brown and cooked through.
Repeat with the remaining batter.
3. Assemble
Stack the pancakes on a serving plate.
Top with fresh banana slices, drizzle generously with warm maple syrup, dust with powdered sugar, and add whipped cream or a pat of butter if desired.
